This Peach Basil Bellini is a refreshing take on the classic Bellini cocktail. It has the sweet taste of ripe peaches and the herbal smell of fresh basil, and the bubbly Prosecco goes perfectly with it.
Ingredients:
- 3 ripe peaches, peeled and diced
- 10 fresh basil leaves
- 1 tablespoon sugar
- 1 bottle Prosecco, chilled
Instructions:
In a blender, combine diced peaches, basil leaves, and sugar
Blend until smooth
Pour the peach basil puree into champagne flutes, filling each glass about one-third full
Top off each glass with chilled Prosecco
Gently stir to combine
Garnish with a fresh basil leaf, if desired
Serve immediately and enjoy
