Ingredients:
- 1 cup red lentils
- 4 cups vegetable broth
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 tablespoon turmeric powder
- 1 tablespoon fresh ginger, grated
- 1 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- Salt and pepper to taste
- 2 tablespoons olive oil
- Juice of 1 lemon
- Fresh cilantro for garnish
Instructions:
Put the red lentils aside after running them under cold water
Put olive oil in a big pot and heat it over medium-low heat
To this mix, add chopped garlic, onions, carrots, and celery
Cook the vegetables in oil until they are soft
Add the ginger that has been grated, cumin powder, coriander powder, and turmeric powder
Do this for two minutes
Put in vegetable broth and red lentils
Bring to a boil, then lower the heat and let it cook for 20 to 25 minutes, until the lentils are soft
Add pepper and salt to taste
Add the lemon juice and mix it in well
Take the soup off the heat and let it cool down a bit
Pour the soup into a blender and blend it until it is smooth
You could also add the soup to a blender in small amounts and blend until smooth
Serve hot with fresh cilantro on top
