Ingredients:
- 2 cups mashed sweet potatoes
- 1 can 15 oz black beans, drained and rinsed
- 1/2 cup breadcrumbs
- 1/4 cup diced red onion
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 1/4 cup chopped cilantro
- 4 whole wheat burger buns
- Lettuce, tomato, and your favorite burger toppings
Instructions:
Put the black beans and mashed sweet potatoes in a large bowl
Mix them well by mashing them together
Mix the sweet potatoes and beans with ground cumin, smoked paprika, salt, pepper, and breadcrumbs
Add diced red onion, minced garlic, and cumin
Mix the ingredients together until they are all fully mixed in
Add the chopped cilantro and mix it in
Split the mixture in half and shape each half into a burger patty
Get a grill or grill pan hot, but not too hot
If you want the sweet potato bean burgers to be nice and charred, grill them for about 4 to 5 minutes on each side
For one or two minutes, toast the whole wheat burger buns on the grill until they get a little brown
Put your sweet potato bean burgers on the toasted buns and top them with lettuce, tomato, and any other toppings you like
Enjoy while hot
