Vegan Baked Blueberry French Toast

A delicious vegan twist on the classic French toast, loaded with juicy blueberries and baked to perfection. Perfect for a cozy breakfast or brunch

Ingredients:

  • 1 loaf of vegan French bread, sliced
  • 1 cup of blueberries
  • 2 cups of unsweetened almond milk
  • 4 tablespoons of maple syrup
  • 1 tablespoon of ground flaxseed
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of cinnamon
  • Pinch of salt

Instructions:

Warm the oven up to 175F 350C

Maple syrup, ground flaxseed, vanilla extract, cinnamon, and salt should all be mixed together in a bowl

Spread out the bread slices in a baking dish, and then pour the mixture over them, making sure that each slice is covered

Spread the blueberries out on the bread slices in a thin layer

After the oven is hot, bake the bread and mixture for 25 to 30 minutes, or until the bread is golden and the mixture is set

Serve hot with extra maple syrup or any toppings you like
