Black Bean Cheese Quesadillas

These Black Bean Cheese Quesadillas are a quick and tasty way to eat lunch or an appetizer. In between two crispy tortilla shells are tasty black beans, melted cheddar cheese, and a mix of spices that make them taste great. Great for a quick and filling meal

Ingredients:

  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 1 cup diced tomatoes
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 2 tbsp vegetable oil

Instructions:

Use a fork or potato masher to mash the black beans in a bowl until they are mostly smooth

Chopped garlic, ground cumin, chili powder, salt, and pepper should be added to the black beans that have been mashed

Combine well by mixing

Spread a lot of the black bean mixture on one half of a flour tortilla that has been laid out

On top of the black bean mixture, sprinkle some shredded cheddar cheese

To make a half-moon shape, fold the other half of the tortilla over the filling

Put 1 tablespoon of vegetable oil in a large skillet and heat it over medium-high heat

Carefully put the quesadilla in the pan and cook for two to three minutes, until the bottom is golden brown

It will take about two to three more minutes of cooking on the other side until it is golden brown and the cheese is melted

Take it out of the pan and do it again with the rest of the tortillas and filling

Take the quesadillas and cut them into wedges

Serve them hot
