Pinto Beans and Rice


Toronto Fetish Parties

This dish is warm and comforting. It is made with pinto beans and rice cooked together in a slow cooker with aromatic spices.

Ingredients:

  • 1 cup dried pinto beans, rinsed and picked over
  • 1 cup long-grain white rice, rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Optional toppings: chopped cilantro, diced tomatoes, avocado slices

Instructions:

In a slow cooker, combine pinto beans, rice, onion, garlic, vegetable broth, cumin, chili powder, salt, and pepper

Cover and cook on low for 6-8 hours or high for 3-4 hours, or until beans are tender and rice is cooked through

Stir well before serving

Serve hot with optional toppings as desired
