This Easy Vegan Cheese Ball is tasty and creamy, and its great for parties or as a snack. For a tasty dairy-free option, its made with cashews, nutritional yeast, and spices.

Ingredients:

  • 2 cups raw cashews, soaked overnight
  • 1/4 cup nutritional yeast
  • 2 tablespoons lemon juice
  • 2 cloves garlic
  • 1 tablespoon white miso paste
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon smoked paprika
  • 1/4 cup chopped fresh parsley
  • 1/2 cup chopped pecans or walnuts, for coating

Instructions:

The cashews should be drained and rinsed

Mix the garlic, miso paste, onion powder, salt, smoked paprika, nutritional yeast, and lemon juice in a food processor until the mixture is smooth and creamy

Put the mixture in a bowl and add the chopped parsley

Put the mixture in the fridge for at least two hours to make it firm

When its firm, roll the dough into a ball and coat it with chopped pecans or walnuts

The cheese ball should be put in the fridge for another hour before it is served

Put crackers or vegetable sticks on the side
