Ingredients:
- 1 whole turkey 12-15 pounds, thawed if frozen
- 1/2 cup olive oil
- 2 tablespoons gluten-free poultry seasoning
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 onion, quartered
- 4 cloves garlic, minced
- 1 lemon, halved
- 1 sprig fresh rosemary
- 1 sprig fresh thyme
Instructions:
Preheat the oven to 325F 165C
Remove giblets and neck from the turkey cavity, rinse the turkey, and pat dry with paper towels
In a small bowl, mix together olive oil, poultry seasoning, salt, and pepper
Rub the turkey inside and out with the olive oil mixture
Stuff the turkey cavity with quartered onion, minced garlic, lemon halves, rosemary, and thyme
Place the turkey breast side up on a rack in a roasting pan
Tent the turkey loosely with aluminum foil
Roast in the preheated oven until the internal temperature reaches 165F 75C in the thickest part of the thigh, about 3 to 4 hours depending on the size of the turkey
Remove the foil during the last 30 minutes of cooking to brown the skin
Once cooked, transfer the turkey to a cutting board and let it rest for 20 minutes before carving
