Ingredients:

- 5 lbs boneless, skinless chicken breasts, cut into cubes
- 1 cup apricot preserves
- 2 tablespoons soy sauce
- 2 tablespoons sesame oil
- 1 tablespoon Dijon mustard
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- Salt and pepper to taste
- 1 bunch asparagus, trimmed
- 2 tablespoons olive oil
- Sesame seeds for garnish
Instructions:
In a bowl, whisk together apricot preserves, soy sauce, sesame oil, Dijon mustard, minced garlic, and grated ginger to create the marinade
Place the chicken cubes in a resealable plastic bag and pour half of the marinade over them
Seal the bag and marinate in the refrigerator for at least 30 minutes
Preheat the grill to medium-high heat
Thread the marinated chicken cubes onto skewers, alternating with asparagus spears
Brush the skewers and asparagus with olive oil and season with salt and pepper
Grill the skewers for 10-15 minutes, turning occasionally, until the chicken is cooked through and has a nice char
While grilling, baste the skewers with the remaining marinade for extra flavor
Remove the skewers from the grill and sprinkle with sesame seeds for garnish
Serve the Apricot Sesame Chicken Skewers with Grilled Asparagus hot and enjoy
