Ingredients:
- 2 pounds pork shoulder, boneless, cut into chunks
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 can 15 oz black beans, drained and rinsed
- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 1/2 cup chopped cilantro
- Juice of 2 limes
- 8 small flour tortillas
- Sour cream and shredded cheese for topping optional
Instructions:
In a crock pot, put the pork, chopped onion, minced garlic, cumin, chili powder, paprika, salt, and black pepper
Mix everything together, then set the heat to low and cook for 6 to 8 hours, or until the pork is soft and can be easily shred with a fork
In a bowl, mix black beans, diced tomatoes, diced red onion, chopped cilantro, and lime juice
Set this bowl aside while you cook the pork
Put it in the fridge until youre ready to use it
When the pork is done, use two forks to shred it and then mix it with the juices in the crock pot to make it taste even better
Warm the flour tortillas up in a dry skillet or the microwave before putting the tacos together
Put a lot of the shredded pork on each tortilla
Then, add some black bean pico on top
If you want, you can add sour cream and shredded cheese as well
Serve the Black Bean Pico and Crock Pot Pork Tacos right away and enjoy
