Cheesecake-Poppy Seed Muffins

These muffins combine the creamy richness of cheesecake with the delightful crunch of poppy seeds. They make for a perfect breakfast treat or a sweet snack.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup unsalted butter, melted
  • 1/2 cup cream cheese, softened
  • 1/4 cup milk
  • 1/4 cup sour cream
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 tbsp poppy seeds

Instructions:

Preheat your oven to 350F 175C and line a muffin tin with paper liners

In a mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt

In a separate bowl, whisk together the melted butter, softened cream cheese, milk, sour cream, egg, and vanilla extract until well blended

Pour the wet ingredients into the dry ingredients and stir until just combined

Gently fold in the poppy seeds into the batter

Spoon the batter into the muffin cups, filling each about two-thirds full

Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean

Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely
